Growing up in Hong Kong, one of my favorite childhood memories was going to wedding and birthday banquets. Why? the food, of course! Yes, I also loved the dressing up, catching up with relatives and friends, staying up late, the whole nine yard! Well, ok may be not everything. I did not like the ear-piercing noise from the Mahjong games or the foggy second hand smoke exhaled by the chain smokers. Kaff! Kaff! Did the noise and smoke bother me? Of course they did! But hey, life is never perfect, I just had to take bad with the good. Those were just minor things I had to put up with for incredible food. So worth it!
How incredible was the food? Just two words to sum it up: quantity and quality.
My family usually only likes crispy vegetables but Broccoli is probably one exception to that rule. We love slightly steamed crispy broccoli, but also enjoy slowly cooked broccoli in this easy peasy broccoli cheese soup. I, personally, love soup but not everybody in my family share that passion, so I tend to cook soups with their favorite ingredients. This easy broccoli cheese soup has three of their favorite ingredients: broccoli, cheese, and potatoes. Naturally, it has become one of our family’s favorite soups. It has also become one of my go-to soups whenever I want to make something that is easy, quick, and nutritious to feed my family, I can whip up a pot of this delicious soup from start to finish for about 30 minutes, that is pretty cool, huh? In my last entry, I share with you my Walnut and Blueberry bars. It was a great copycat recipe that you can make your own KIND bar for a fraction of cost. Did you get a chance to try it? Almond and Coconut are among some of my favorite food. I, especially, love them after they are roasted. Every nutty head I know loves a KIND bar (the nut kind), of course, I am included. In case you are not familiar with it, here is picture of this popular nutty KIND bar.
It is hard for any nutty head to pass up a KIND bar. It is nutty, crunchy, sweet, yummy, nutritious (especially if you don’t count the sugar) with wholesome ingredients. In fact, some of these ingredients are so wholesome that it is hard to eat them in a normal way. Many people like to sneak them into smoothies, eat them in yogurts or cereals; but I would much rather eat them as part of a delicious KIND bar. The only problem is KIND bars are expensive, they cost between $1 to $1.5 per bar depending on where you shop. My family can easily consume a box of KIND bar (15 bars) in a couple of days; it could cost me $225 a month just on one snack alone, that is crazy!! So for nutty family like us, I have to find a solution. I am happy to report I have find a solution by making my own copycat version!! The good new is my copycat version only cost between 45 cents to 60 cents a bar; that is less than half of the price but just as delicious.
