My family usually only likes crispy vegetables but Broccoli is probably one exception to that rule. This easy broccoli cheese soup has three of their favorite ingredients: broccoli, cheese, and potatoes. Naturally, it has become one of our family’s favorite soups. It has also become one of my go-to soups whenever I want to make something that is easy, quick, and nutritious to feed my family, I can whip up a pot of this delicious soup from start to finish for about 30 minutes, that is pretty cool, huh? Bring the mixture to boil and simmer until all the vegetables are tender. Use a stick blender to process the soup; add the cheese and butter and simmer in low heat until they are melted. Season with salt and pepper if desired.
Serve warm with your favorite bread or salad.
