Sauces

Chinese cuisine has become one of the most popular international cuisines in the world, you can even find Chinese restaurants in the most remote areas of the world.  There is no doubt, the world loves Chinese food.  I believe the popularity of the Chinese cuisine has a lot to do with its sauces, their favors, their complexity, and their combination.  One cannot master Chinese cooking without mastering the making of its sauces.   This  section introduces you to the basic ingredients in our sauces.

SOY SAUCES

Soy sauce is one of the most important ingredients in Chinese cooking.  It is a must in any Chinese pantry.   Without soy sauce, there will have no Chinese food.  There are different types of soy sauce and they are used depending on the type of dishes you are cooking.  The most two basic types are all purpose soy sauce and dark soy sauce.

 

Cooking soy sauce 

This is an all purchase soy sauce, we call it san chau  (it is the last two characters on the right).  San Chau is used in marination
